The silence.<\/p>\n<p>Then it\u2019s your dad who ran away<br \/>\nto Mansfield with Aunty Mab,<br \/>\nwhose best friend was his wallet,<br \/>\nwho said you\u2019d be<em> ladding<\/em><br \/>\nif you joined the athletics club.<\/p>\n<p>Wensleydale takes over conversation:<br \/>\ndifferent coping and through-stones,<br \/>\ndifferent stitches around fields.<br \/>\nLater, in the diary, rennet<br \/>\ndraws the solids out of milk.<\/p>\n<p>From a viewing gallery, we watch<br \/>\nthe workers with carving knives<br \/>\nslice up a tank of curd<br \/>\ninto blubbery slabs that are hauled<br \/>\nover to drain the whey.<\/p>\n<p>My mother, you say, would keep<br \/>\nany milk that had gone sour,<br \/>\nplace it in a muslin bag and hang it<br \/>\nfrom the cold tap; she made<br \/>\nthe best cottage cheese ever.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Stuart Pickford<\/strong> is the recipient of an Eric Gregory award.
